We didn't get any snow out our way on the east coast. We got heavy rain, fog and tornado warnings. Perfect egging weather for the weekend.[p]On Friday I did some tilapia fillets on a plank for an hour at 325. Nice smokey taste.
Saturday I decided to do some stripe steaks the Cornfed way - real high heat. These were an inch and a half thick, and dry aged. In the rain and fog the egg went
past 750 until it pointed straight down (I'm guessing it got to 900, may 850). I cooked them at 4/4/3 and became a family hero. They were worth the trouble. Next time I might put on a mustard slather and go heavy on pepper and light on salt. [p]Sunday - today - I am doing ribs with Cat's marinade. I went to the butcher and got ribs with "round bones." A week ago somebody in the forum passed along this bit of fole wisdom and I have decided to check it out. [p]It's still raining.

<p />char buddy, I'll trade weather. How much snow is enough? We got about 10 inches the first go round. Missed the second, now preparing for the third.
I cooked strips steaks on Saturday. Getting ready to throw on some wings tonight. Got babybacks ready for Monday.
Wife says I'm crazy for cooking in this weather, but she doesn't complain about the food.[p]Egg-on

  • Car Wash Mike,[p]What is it GFW always waya - the weather sucks but life is good. [p]Tonight's ribs were the best yet. Whoever came up with that round bone idea (look for round bones when you buy ribs) knew what he was talking about.[p]
