Smoked garlic

In last weeks' PARADE magazine, chef Claud Mann mentioned poaching garlic heads in Guiness Stuot & then smoking them. He said "Smoked garlic is like candy. My duaghter and I eat a whole head each." [p]Has anyone done anyything like this? I have no idea how long to poach or smoke them..... JCA

    After looking in several cookbooks and a few web sites, here is what I have found. To poach garlic, put it in 3 cups of fluid, bring to a boil and simmer for about 15 minutes. Smoke garlic at about 200-225 degrees for about 20 to 30 minutes. These instructions are a blend of two different sources and may not work together. Good luck and let me know if it turns out.
