Dr. Chicken sent me some great instructions on brining/smoking a turkey, and he suggests an overnight brine. Most information I've read suggests that it must go on over 4 hours, or it doesn't work, but how long is too long? The earlier post on John Ash's turkey brine calls for a 2 - 4 day soak! This seems like a very long time.[p]Any thoughts, fellow eggers? By the way, my small egg is scheduled to arrive tomorrow via ups from a dealer in Pennsylvania -- I'll do a separate post once it arrives, as if it comes through, these guys are AMAZING.
