pot roasty tasting brisket

i bought a whole lot of meat for vacation. first brisket went on the egg the first day. didnt get to the second for 10 days. i knew it was going to be a while so i dry aged it on the bottom shelf. so moist it must of internally stewed cause it definately tasted like pot roast. the first had good flavor and leftovers chopped up later and reheated in sauce made great sandwiches
was it the dry age that did it in. if i wanted pot roast i would make potroast
