Super Slow Cooked Turkey

The free range turkeys I cook tend to have tough tendons when cooked the regular time. Can anyone give me directions on a super slow low temp cook for a 20Lb turkey? I would assume this would involve a mild brine solution/recipe to highten skin crispness. Please include advice on my charcoal amount needed.

    Ilumen,[p]Welcome to the forum. I do appreciate your idea as game birds have the same thick tendons. Unfortunately, tendons do not break down with slow heat like the gristle and collegen in tough muscle fiber.[p]Spin
