Lazy Day Sunday Afternoon

As the afternoon wore down and the race was over, I fired up the egg for an indirect cook of chicken thighs with Raging River rub. Added some smashed taters and a great avocado, lettuce and tomato salad with eye-talian dressing. Great way to wind down the weekend. I hope all had a great weekend as well.

    dhuffjr,[p]Really nothing much to it. Just took a ripe avocado and made a 1" dice of it, ditto for a fresh grown tomato, roughly tore some leaf lettuce. Threw it in a bowl added some italian dressing and a very few croutons. Very light, very simple and tasted just great with the other food.
