Got Butt - Now What

Hey All,[p]I picked up a couple of approximately 7 lb butts. So here's my questions. What dome tempature should I use? What is the estimated time to get this baby cooked and ready to serve? I am hoping to have this puppy going into some mouths at about 11 AM on Sunday morning.[p]As always thanx to you Eggsperts out there.[p]Jethro

Dome temp 250*. Figure about 16-18 hrs.

JJ,[p]Thanx, JJ! So 5 or 6 tonight the advenuture starts. Do usually place the polder in at the start or wait until the next morning and then insert her?[p]Jethro

Put the polder in at the start. That way you won't have to open up the egg during the cook. When I cook butt I place it with the fattiest part up and the only time the egg is opened is to remove the butts at the end of the cook.[p]Mr Beer
