Sailfish

Just got a nice size slab of fresh Sailfish. I've smoked Salmon by first curing with salt and brown sugar, but don't know if you do the same with Sail. We grown up with smoked sail, marlin and kingfish, but don't know how it's done.
Any help out there?

    it's a very tough fish to conquer.
    I think you should just send it to me and
    I'll be glad to fix it up and send you some back !)[p]no, really. like many large ocean fishes, give it a
    minimal marinade and just barely cook it through, or
    season it up well and smoke it very slow until it is
    dried. it's hard to ruin such good meat.[p]let us know how it turns out. HS!
