<p /> I stopped by the local Mexican grocery store yesterday, as I needed to do a pork butt cook for a good friend’s mother-in-law. It is a surprise cook, just show up at the door and drop the baby off. This store always has a great selection of butts, so I got two - each tipping the scales near ten pounds. [p]I injected them with Chris Lilly's injection and rubbed each with a different ken stone rub. The egg set-up was raised grid, indirect and the guru set at 225 pit and 195 meat. They hit the egg at six last night and by seven this morning, they were 195 internal temp. I triple foiled, wrapped in towels and cooler'd them until it was time to deliver the one. [p]119_1917.jpg
