What should the dwell time be for a medium-well done steak? I am grilling Porterhouses. Thanks

Fireball,[p]With that information to work with -- the answer is from 0 to 4 minutes per side.[p]You need to know how thick they are first and how done you want them second. There is often no dwell time needed if you sear both sides of a 3/4" steak for 3 min. But a 2" steak will often take 3-4 min and a 2-4 min dwell. I do filets for 5 min per side and no dwell at all, but they are 2" and I like black outside and pink in the middle. Doing steaks is a personal touch cook since it all happens in under 10 min, experience helps with short cooks like that, so try a few times and you will figure out what is right for you.[p]Tim
