Sorry 'bout my edginess earlier this week![p]Now, tonight's dinner will be two .75 pound red tuna steaks -- cut from a large tuna loin. I plan to cook it hot and fast 1.5 minutes per side and a 2 minute dwell. I've considered covering one in char-crust, just for fun. The other will be covered in freshly cracked pepper, salt, lemon juice and garlic.[p]It's really tough to beat tuna cooked on the egg. My wife prefers it to filet, which is few difficult to believe, but true.[p]Happy Egging![p]Roll tide (terrible)[p]Bama Fire
