Checked out your post, that is some awesome looking Halibut. I have a question for you or anyone regarding the planking? Do you plank the fish for a specific reason or can I accomplish the same thing by just throwing some wood in the coals?
Just wondering about the planking technique in general I guess? I guess it makes the cook indirect? If I was not using a plank am I going to want the plate setter in place for the cook? Thanks for any suggestions.
