Long Cooking Butt

Every butt is different. At nine this morning I put a three pound butt on the egg. It is now about 5:30 pm (eight hours plus) and it is at 169 degrees internally. The dome temperature held between 225 and 250 degrees for the first six hours then I kicked it up to about 300 degrees. Dinner may be at ten o’clock. Fireball

The butt is out of the BGE and on the table. Once again, it's great. Eleven hours latter, an internal temp of 187 -- I wrap it in foil, it rested, I pulled it, and we ate it. One lesson learned was even if you think it will be done in six to eight hours, fill the egg up to the max with lump. I didn't and ran out of lump at 187 degrees internal. Humpty came through once again. Have a great weekend. Fireball
