does anyone have a good recipie and cooking instructions for 16 oz bone in pork chops? I would like to stuff them with a veggie stuffing or what do you recommend?

    ron brennan,
A 16oz pork chop? That must have been some pig! I've done smaller ones, maybe 8oz and 2 inches thick. Stuffed them with chorizo, diced jalapeno, onion, a little fresh mozzarella and a tiny bit of bread crumb. Make sure the stuffing is cooked. That way, you don't have to overcook the chop to get the stuffing up to temp. Lightly coat with mustard or oil. Rub with salt, pepper, and ground sage. I'd shoot for 150. If your chop is 16oz, it must be really thick or as big as a baseball glove! If thick, I'd slow roast it at 250 indirect. If it's more like 2 inches, 350 direct.
Hope there's something here that helps. But whatever you do, it'll be great.
