I'm cooking for about 35 people at work. How many pounds of Boston Butt will I need? [p]Thanks

I would say about 1/2 to one pound each. [p]Chef Jerry

Jeauxboo, if my memory serves me correctly, one pound of uncooked butt will yield approximately 2.25 four ounce sandwhiches. You have about 40% loss in weight with the cook, fat and bone waste. If this is not correct, I am sure some one will jump in and help out. Tom

Sandbagger, you're right. Now the question is to decide how many 4 oz servings a crowd of 35 will eat. I normally try to estimate 2 per male adult, 1 per female adult and 1 per child. But then it's just easier to estimate using 2 per person and just take any extra home. so for 35, we'll need 70 servings and 70 divided 2.25 = 31.1111... pounds. So shoot for about 30-34 pounds and you should be good. Sounds like 4 8-pounders should do and he should easily get 4 butts of that size on a large BGE.
