Mexican Pork Loin

Somewhere I remember seeing a recipe on this and thought it was in one of the eggfest books. I have not been able to find it and need to Wow them at Church again. I like many of you have gained quite a reputation cooking on my egg and bringing food to different events. I need something new something to knock folks off of their feet again. If you know of this recipe please let me know of the link or if you know of something else that I can do with a pork loin please let me know.[p]To date I have cooked Elder Wards' Pulled Pork, cooked a pork loin with apples, cashews and fig preserves, and last but not least the Coffee Crusted Pork Loin which totally knocked them off of their feet.

This may be what you are referring to, its in the recipe section. I've done it several times (and will again this weekend ), I think its great, but it may be a little spicy for some.
If you can't wait the whole time, just marinate it for whatever the time you have, it will still be good.
