I'm mid way through your 3/1/1.5 baby backs and for some reason I have fought and fought the temp today and "it" decided 250° was where it wants to be PERIOD. What suggestion do you have? Should I shorten the direct time at the end or lengthen the wrapped time? I notice my lip is not sitting perfectly and I bet the fire is getting more air than I want, so I've got to take care of that soon. Thanks, Gordon.

    I trusted that receipe to memory aand I was thinking it was to be 220°, so when I just visited your web site I see 250° was the correct temp all along...worried all afternoon for nothing!

    RRP,[p]220-250 will work. Lower is better IMHO.[p]Anytime you have a "stuck" thermometer - open the bottom vent 2X or 3X or 4X what you currently have. A blocked grate is often the cause and you need to provide a max amount of oxygen to get the offending piece to burn or provide enough oxygen to offset it. Good luck and enjoy the ribs.[p]Tim
