3-1-1 Method -HELP

Hey i am cooking my first spareribs on the BGE tomorrow. I purchased a 7 1/4lb slab. HELP - i have read alittle of the 3-1-1 and 3-1-1.5 methods , but cannot find the method now that i need them. Where can i find it or is it done my memory YIPES. HELP PLEASE my time is escaping. Thanks in advance. beginner bob

    It's 3 hours indirect with the smoke around 250°. The next step is wrapped in foil at 350°. The final step is direct on the grid while you add sauce if you're saucing.[p]A lot of folks add something sweet to the ribs during the wrapping stage and also add some liquid to the foil, apple juice is a good choice.[p]HTH

    The size of the ribs (7.25 lbs) sounds like it may be 2 racks of
    spares or some T-rex ribs (N0 relation to the gentleman who
    posts here). The 3-1-1 method means that you smoke your ribs,
    bone side down, with rub, for 3 hours. Then you foil them
    with a bit of moisture, beer comes to mind, for about an hour.
    Then remove the foil and put them back, Naked, on the grill
    for another hour or so. About 20 min. before taking them off,
    put your finishing sauce on. You don't want to put the sauce on
    too soon because sauces with tomato and or sugar will burn.[p]My wife and I have a motto... meet the guests at the door
    with a couple of martinis, keep the light bulbs at 25 watts,
    and your guests won't care about dust on furniture or minor
    "OOOPSes" in cooking.
    You will do great and your guests will think that your ribs
    are the best they have ever had.[p]Enjoy!
