Boston Butt - To Foil or Not To Foil?

Unknown
edited November -1 in EggHead Forum
Planning to BGE a pork butt tomorrow. Is there any difference between a Boston Butt and a Picnic Butt (pork shoulder)?[p]Are there advantages of smoking it in foil? I've seen recipes doing either or both and I'm confused.

    NEWBGE,
The Boston Butt and the Picnic makes up the front leg of the pig. The Boston Butt is the upper cut. You can use either for Pulled Pork, I prefer the Boston Butt.(less fat) Forget the foil until the cook is done. Place the Butt direct onto the grill. If you put it in foil without polking hole into the foil the smoke can not permeate the meat. After the pork reaches 195 to 200 degrees (internal Temperature) and you are not ready to pull it and serve you can place it in foil now and wrap the foil in old towels and put the whole bundle into a dry ice chest. This will keep it hot for hours until you pull and serve.
