As for putting a cast iron skillet on the top of a chicken to crisp the skin, this is done while the chicken is still on the egg correct? Also, how high of a fire do you use to heat the skillet on the stove, and how long do you leave the skillet on the chicken? Thanks in advance.

    I use a flat cast iron pizza pan but there's no reason you can't use a large skillet. You will just have to balance it a bit more carefully. The pan sits on the burner for about 5-8 minutes on high heat. And yes, it goes right on the chicken while still on the grill and stays there for about the last 10 minutes of the cook.[p]Hope that helps.
