pork tenderloin jerky?

Unknown
edited November -0001 in EggHead Forum
My local meat department had pork tenderloin on sale and I bought a bunch. Does anyone have a recipe for pork jerky? I just bought a Guru Competitor and would like to try it out on a long, low, slow cook. Any suggestion would be appreciated.

  • Joel Johnson,
I like to marinate them for 24 to 48 hours w/ salt, brown sugar, Dizzy Pig Cowlick rub, soy and hot sauce. Slice them into 1/4" medallions and don't over dry them. Leave them a little pliable. If you don't like that, you can always grind it with some beef and make slim jims. Apple and hickory chips are a nice combo for smoke wood.[p]BBQ Bob Trudnak
