i would love to try out those fatties that i have seen from time to time. how do you serve - cut up with bread, appitizer, any other uses? i am thinking of doing some for an easter brunch. please let me know time, set up, smoke, temps, etc. any help would be appreciated. thanks!

I did the fattie thing for a snack last weekend. As I was preparing, my wife walked by and said "that looks boring. put some cheese and peppers in there." So I did.[p][p]Added some DP...[p][p]Not bad.[p][p]

Ya, it's cream chesse and although it wasn't bad, I definitely think feta is a good idea.[p]I will also go with fresh peppers next time (was not in the orginal plan, so I use what was in the frig) as these were a bit hot for my wife's taste...what a wuss.
