The "Gator" Griller,
Give them about 3 hours indirect with some of your favorite smoke (Hickory, Apple, Peach, etc) at about 250°. After the 3 hours wrap them in foil with a little bit of apple juice and seal them up tight. Cook them at 350° for another 1.5 hours and then unwrap them and finish them off direct on the grill while you sauce them.

The "Gator" Griller,[p]I do mine close to Bobby-Q's suggestion. I cook mine for closer to 1 hour at 275-300 in the foil, then 15-30 minutes (sometimes 60) direct on a raised grid at 250-275. The direct low temp step is kind of funny. If your ribs aren't as tender as you want to be (not done), it will cook them further and make them tender. If they are floppy, fall off the bone tender, it will firm them up a little, but make sure not to dry them out.
