Soon to be "egghead". Need low and slow advice.
Hi all,
I just purchased a pretty awesome all infrared grill, and what I'm looking for is having something to cook "low and slow", or bake, in addition to having my monster grill. Knowing my personality, I can see that cooking in ceramic might end up being more enjoyable than I could ever say. Originally I was planning on some sort of cooker that would ONLY go low and slow, so it would be completely different than my steak searing infrared. I hope that BGE doesn't make me want to not use my new grill. And I'm being serious here, as my new grill is only 1 day old, and it was incredibly expensive. Anyway, back to my question. I've been told that there is a gizmo out there that can be attached to ceramic cookers. Supposedly you can control the exact temperature with a wireless remote control. Have any BGE folks used these? I really want to soar at low and slow cooking, and wonder if I need to get something extra such as this gizmo, to keep the temperature accurate and constant. Also wondering if you truly can "cold smoke" in a BGE.

there is a gizmo, but you can hold rock-solid temps without it, unattended, overnight.[p]but it does take all the guesswork out of it, from what i hear. before it (and some still do now), folks have been dialing in temps on the BGE and walking away from it for 20 to even 30 hours at a time with no fuss.[p]can't answer the question about an infrared steak-o-tron, but if you got it because that's what the serious steakhouses cook on, be warned i'm 99% sure there's not a person here who would prefer a steakhouse steak to a bge's...[p]

JeffW, I'd suggest you return the infrared equipped grill. It is a difficult method to master and very limited in what you can do with it. I looked at infrared grills prior to buying the egg. Buy the egg, then if you still need an infrared grill or grill in general, then buy one. I think you will find spending the money on egg gadgets will be a better value than the gas grill. Just a thought from a guy who walked in your path...T

I think you are talking about a Tec grill. I have had the
experience of eating boneless chicken breast off of one and
it was very impressive--the juiciest I have ever had 5 minutes after it went on the grill--or should I say glass.
That same day I ate the juiciest pork chop to that point in
my life off of a BGE and I decided then that I had to buy one.
The egg adds that rustic flavor to food from the lump charcoal that you don't get from infrared energy (yes I know
about their wood chip system too) and it's more fun to cook
on.
The egg doesn't really need the attachment you are talking
about but if you don't mind spending the money (you already
spent well over 2 grand) on insurance take The Naked Whiz's
advice.
