I need some help finding the recipe for banana bread that CousinTX made at the OK eggfest last year. I have checked the OK eggfest website and the recipe link is gone. Also checked the archives and it is not there.

    Hope this helps.[p]Bread, Banana, Aunt Jennefer's
    [p]2 Cups Sugar
    2 Eggs
    ¾ Cup Vegetable Oil
    3 Tsp. Vanilla Extract
    2 Cups Flour
    3-4 Bananas, Very Ripe
    2 Tsp. Baking Powder
    ½ Tsp. Baking Soda
    2 Tsp. Cinnamon, Ground
    1 Tsp. Salt
    2/3 Cup Nuts, Chopped, Optional



    1 Beat the eggs, oil, vanilla, bananas & sugar by hand until smooth.
    2 Sift the dry ingredients into the wet mixture, stir until smooth.
    3 Add nuts and mix well.
    4 Grease 2 loaf pans, 1 Bundt Pan or 8 mini loaf pans.
    5 Use a plate setter with a pizza stone to avoid burning the bottom.
    6 Bake in BGE @350° F - 45-50 minutes
    7 Bread is done when a toothpickis inserted and comes out cleanly.

    I may or may not be there, which is why I have not registered. It turns out that I have a bachelor party that day and night in OKC...so, we may just have to stop by and get some great egged food!! If I don't make it ya'll have fun (which I know you will)and be sure to eat some for me (which I know you will!)[p]Chris
