Smoked Almonds

Someone recently posted re smoked almonds and stated that they preferred using egg whites as a binder for the seasoning. Can you refer me to a recipe for using egg whites? I love the smoked almonds on Nature Boy's site, but would like the stuff to stick a little better.[p]Clay in NC

I've done these. Wish I could give proper credit, but I don't have the source. I have made many pounds of these, very popular at the watering hole.
[p]**********Binders*********
2 Tbs Garlic Vinaigrette (or garlic olive oil)
OR USE
1 egg white + 1t of water
*********Nuts**********
2 cups peanuts
1 1/2 cups Pecan halves
1/4 cup roasted sunflower seeds
(Other nuts work well too)
2 tsp chili powder
1 Tbs lemon juice
2 tsp ground cumin
2 tsp red pepper flakes
1 If you are not partial to all of the chili seasonings, cut back and use some rub.
2 Using a dome temp of 300°:
3 Put peanuts, pecans, and sunflower seeds in bowl. Add additional ingrediants and mix, coating all the nuts well. Spread onto single layer on baking sheet or pizza pan. Smoke lightly for 30-40 minutes, flipping nuts halfway through.

Thanks Richard![p]The egg white worked great, nuts are not greasy and the spices stick on good. Just made another batch on friday using pecans, almonds and peanuts. Found out I don't like the pecans as they tend to scorch very easy, peanuts and almonds turned out great. I add sugar, reduce the chili powder-smoked with pecan. Plenty of room for experimentation.
