Man those are pretty. [p]I have my first ever batch of Clay's Pulled beef cooking away. Almost to the end of stage 2. Think it is going to be pretty good, but also found out that I only had a size 10 dutch oven, will now have to invest into the size 12.....oh the sacrafices we make.

For "this" cook, I went indirect on a rasied grid above a platesetter. Straying from the 3-1-1 method I went 3-1.5-1. Apple wood for the smoke and apple juice in the drip pan. You can see the 3-1-1 process explained on my website in the cooks section if you are not familiar with it. I dont always cook ribs the same way, some times no foil, sometimes I cook direct, just depends on the mood that day..LOL[p]Wess
