Okay 1 more butt question

Unknown
edited November -0001 in EggHead Forum
I am cooking a couple spachcock chickens tonight. They'll go on in 15 minutes or so. Later this evening, I am putting on 4 boston butts for pulled pork tomorrow. I cleaned out the egg, sorted the lump and then threw the smaller lump back in for the chicken (thinking I would save the larger for the overnight). I lit the fire and thought, "hmmm, that was stupid, how am going to get the left over smaller lump out when it's on FIRE!" [p]Any suggestions?[p]Thanks,[p]Dumb*** Ed in TX

    Ed in TX,
If you don't have a bunch of lump in there you could open it up and let it burn off. Then add your bigger chunks and go from there.[p]If you have a great deal in there try and pull it off to the side and load in some bigger chunks in the center bottom. I'd then pull the little stuff away from the air holes and lay big pieces across them. Then fill er up as per usual.[p]Just keep an eye on it and you'll be fine.

    Ed in TX,
just let the fire die down, toss in the new lump, and stir it all together.[p]there's no big deal about small lump in a lo-and-slo

    Ed in TX,
    no problem...
ideally, you wanna build the fire with big chunks at the bottom, etc.[p]but after a few butts, i got lazy and mixed new lump with old, including tiny pieces. as long as you make sure you have airflow, yer golden. ...a friend of mine uses a stick or ash tool and pokes it all the way down to the fire grate in a few places to make sure he's got airflow.

  • stike,[p]Now that's pretty tricky. The chicken came out great! So I have to make some rub and get going on the pork. I think I'll do Elder Ward's with an applejuice injection.[p]Ed

    Ed in TX,
if you have done butts before on other smokers, then i'd say go ahead and inject. if this is your first time doing a butt (forgive me if i'm missing somewhere where you explained this), you might wanna skip the injection just so you can get a baseline of taste/experience. then inject the next one, for comparison.[p]if you have done these before, ignore me. hahaha[p]if you inject because the butts you have done have needed a little insurance against drying out, then i'd say again, try it without. the butts i've done just fall apart and are moist and wetter than heck inside. the egg doesn't dry meat out like the metal stuff does.
