<p />i just gotta ask, how long do those resteraunts boil the ribs before cooking. i got these corned beef ribs last year and they were the worst thing to ever come off the egg. just have to try again and i really think that boiling is the only way to fix the flavor of these really lousy ribs. these are the only thing ive ever tossed since cooking on the egg.the butcher says that they make a great boiled corned beef dinner

fishlessman, soak over night in cold water, changing the water a few times, if you can remember it. Dry well, dust with some more cracked black pepper and garlic. Cook indirect at approx 250° dome for 5-6 hours, mebbe more.

    Rumrunner,
well ill give it a shot both ways. ill toss some in with the boiled cornbeef dinner then grill. and some in with the soaking for a pastrami and see if they can be fixed. these are a grey corn beef with just a little curing agent mixed in with the salt, just a tint of pink in the meat.

fishlessman, I'm searing the CB flat and the veggies on he ceramic grill, then the cb is going into a cast iron dutch oven w/the liquid, cooking indirect on some firebricks. When almost done, the veggies are going in the pot. Hope this turn out :)

fishlessman,[p]I know of a couple places (and some non-barbecue folks)that season then pressure cook their ribs. Then they are oven finished by roasting and sauced at the end and broiled. Depending on the thickness, I'm guessing that the pressure cook time would only be 10 or 15 minutes before moving to the egg to finish.[p]~thirdeye~

  • Rumrunner,
I also found if it is extremely on the salty side, you can use distilled water to help pull out more salt.

I know someone that used to smoke slow and low until he got a pressure cooker. Now he'll put a butt in pressure cooker add liquid smoke and serves while standing next to his bullet style smoker. He says the key is the pressure cooker - Plain boiling ruins the meat but the pressure cooker works differently. I've been trying to get him to try an egg.
