I noticed a jar of Chipotle roasted peanuts in the food market yesterday so now I'm thinking I can make my own smoke roasted peanuts in the egg. I bought dry roasted peanuts, unsalted and a bag of raw almonds, I have chipotle powder, peanut oil, bakers sugar and flake salt at home. How do I go about smoke roasting nuts?
Thanks,
Clay

ClayQ,[p]I've done these. Wish I could give proper credit, but I don't have the source. I have made many pounds of these, very popular at the watering hole.[p]~thirdeye~[p]Chile nuts[p]Binders:
2 Tbsp. Garlic Vinaigrette (or garlic olive oil)
    OR USE
    1 egg white + 1t of water[p]Nuts
    2 Cups peanuts
    1 1/2 Cups Pecan halves
    1/4 Cup roasted sunflower seeds
    (Other nuts work well too)
    2 Tsp. chili powder
    1 Tbsp. lemon juice
    2 Tsp. ground cumin
2 tsp. red pepper flakes[p]If you are not partial to all of the chili seasonings, cut back and use some rub.[p]Using a dome temp of 300°:
Put peanuts, pecans, and sunflower seeds in bowl. Add additional ingrediants and mix, coating all the nuts well. Spread onto single layer on baking sheet or pizza pan. Smoke lightly for 30-40 minutes, flipping nuts halfway through.[p]

    Happy Trails

    thirdeye,
The recipe sounds great. I'll smoke with pecan, add some cumin(good idea) with chipotle, salt and try egg white binder with a little dried garlic powder for half of the mix, and use garlic oil for the other half and see which I prefer- never thought of using egg whites!
    Thanks,
