Did those Lime Chicken Skewer Things..YUM

Although I discovered I was out of Tsunami, I did the lime chicken skewer things that Grillmeister posted a few back. Used Raging River instead. Discovered EShark had brought guest (5'2", fluttering eyelashes) for dinner, so tossed another couple chicken breasts into the marinade in the last 15 minutes before grill time. Have to report this recipe is an absolute winner. Even with half the amount of marinade and Raging River substitute, it was absolutely great. Ended up with one long skewer for everyone and a short one left over that found its way into the salad I just made for lunch later.[p]I had purchased some mango-pineapple relish at Central Market (one of their loose, bulk items) and it complemented it greatly. While a hot, spicy relish on its own, the chicken mellowed it out into something fabulous. Also tried purple sticky rice. Ever seen that stuff? Honestly this rice is absolutely purple. Took forever to simmer to softness (despite the simmer 10 minutes/rest 10 minutes instructions). It was a pretty bland rice. Other than maybe using it for a little color (which stained every napkin, my shirt, etc), Ithink I'll stick to jasmine or basmati. But it's a fun change of pace and caused quite a few "what the hell is THAT" eyebrows.[p]Gonna make a batch of these at Floridafest, so come by for a sample.[p]mShark

Thought I would do the chicken ginger lime things. Got to the store and no ginger and no oyster sauce. I ended up buying pork steaks to cook like Chubby's. Will try them the next time. Thanks, Tom

MollyShark,[p]I did them tonight as well. I also used Raging River. They were GREAT! While we were eating them my daughter was looking out the window laughing. I looked up to see our dog running through the yard with my neoprene glove that I left on the table which I used to turn the skewers. I guess she gives them a big thumbs up as well.
