OJ/Chipotle Chicken Marinade and Basting Sauce

I made some chicken the other night that came out better than I could have wished for. I had some Boneless Skinless breasts that I wanted to cook and I mixed up some pretty interesting marinade for it. The ingredients are a bit sketchy in my mind but the basics are:[p]1 cup of OJ, reduced on the stove to about 1/2 cup
2 chipotles - minced VERY FINE
1 Tablespoon minced garlic
1 Tablespoon Red Wine Vinegar
1 Tablespoon Ground Cumin
1/2 Cup Olive Oil
3 Tablespoons Minced Fresh Oregano
1 Tablespoon Minced Fresh Parsley[p]There may be some more miscellaneous ingredients but these are the biggies. This was taken from a Salad Dressing Recipe that I saw and thought it sounded good as a marinade/baste. I marinaded the chicken for about 8 hours in half of the mixture reserving the rest for basting. It came out great. The chipotles really add a kick. I may not marinade them for 8 hours next time as it really adds a kick to the meat. That or take out one of the chipotles. The chicken was cooked as normal, direct over about 350 until done. Basted them every 5-10 minutes with the sauce.[p]These were great chicken breasts, different flavor, kinda sweet/sour/spicy. Very interesting flavor and I'll definitely do these again. If anyone is interested I'll get the exact ingredients for this, I wrote things down as I was making it. Just let me know.[p]Troy
