Apple Pie Suggestions

Does anyone have suggestions for baking an applie pie on a small egg?
I was going to set an 8" pie dish upside down on the grate and then place the 12" pizza stone on top. Then put the pie in a pyrex dish on top. It looks like the air will be able to move through.
Once I have indirect set-up, is the temp and time is similar to a gas oven?
I have some cherry wood. Should I use that or pass?
Any help would be appreciated, as I haven't been able to find many posts on apple pie.
