Ribs x 3

We did three types of ribs on Saturday for the UL vs. UK game.[p]Spareribs were used on all three.[p]The first had a classic AMerican style rub.[p]The second was the Apple City Ribs from SMOKE AND SPICE. A bit sweet for my taste, but the Mrs. likes them.[p]The third used the JAMAICAN JOLT SPICE MIX from Steve Raichalen's new book.[p]They were smoked with a combination of hickory chunks and apple chips for 4 hours at a temp of about 200* - 250*. They were in the inverted v-rack and turned once.[p]Perfection.[p]Fritz
