Elder Ward's Brisket

12 to 14 inches of snow last night. I've got a 7.3 # Flat started on my large. I'm reading Elder Ward's "how to" on this site as being cooked DIRECT on a V-Rack. I don't see any reference to a plate setter on this one. Am I right about that? Since he said he finished an 11 pounder in 6 or 7 hours, I'm thinking I got it right. Any advice? Thanks
