Roasted garlic vrs. regular garlic.

Roasted garlic has a much mellower sweeter nutty flavor. I think either way would be good. With the roasted garlic you might want to add for just the last half of the cook since it is already cooked? Just an idear.[p]Cheers!

Car Wash Mike,[p]The roasted is a much more subtle flavor. I'd try mixing in some fresh as well, about 2/3 roasted, 1/3 fresh, with the total being a bit more than you usually use of the fresh. Haven't tried this in scampi but it works very well in spagetti with garlic & oil.

We roasted some garlic this past sunday for super bowl friends. We take the garlic heads, put olive oil on them and wrap in foil. I put the package toward the back of the grill where it is a little cooler and occasionally turned it but roasted for about an hour. Once done you can spread the garlic like butter! Good stuff and everyone liked it.[p]

<p />Car Wash Mike,[p]Mike doing some on the mini as we speak. Think you'll miss the normal fresh garlic bite in your scampi. Roasted ends up being a buttery spreadable great on bread and added to mashed potatoes or just eaten straight up.[p]For me, fresh would be what you're after.[p]-- Steven

Car Wash Mike,[p]I think the fresh garlic would be much better for the hot, fast cook of the shrimp. But give the roasted a try.... I can guarantee whichever one you choose, it won't turn out bad.... hey, it's garlic! [p]john

Hey guys, roasted garlic is a different flavor and should be given credit as such. I love it... it's delicious. From a health stand point, Garlic has loads of wonderful stuff for you and is very healthy to eat, but it must be raw for health benefits.[p] My wife hates my love of garlic! I hate the butt hair scorching garlic farts it gives me! lol...[p]Cheers!

Car Wash Mike,[p]I like to shed some of the outside covering on the whole heads of garlic and hit it with some olive oil as UmBoy stated in his 'process'. Where we diverge from that point is I like to leave them unwrapped - addes a nice smoke flavor. Go for about an hour at 325-350. [p]Using a 6 inch unglazed tile around 3/8 inch thick for ceramic mass and to make it indirect - remember this is the mini. The dish is then raised off this with some 1 inch kiln posts to keep the heat more even.[p]After an hour the cloves melt in your mouth and spread like butter.[p]-- Steven
