A Seafood Delight Thanks to Gretl and BlueSteel

Last night I tried BlueSteel's method of scallops wrapped in bacon - just wrap the scallop in bacon, put a little rub on the open ends and then cook over a drip pan for 30 minutes at 375. They were delicious! The bacon was not crispy but completely done and tasty. Then I followed that up with Gretl's Salmon with Dijon Bourbon Glaze (in the recipe section). I had trouble holding 350 degrees since I had so much stuff on the grill (I was cooking potatoes as well on a seafood griddle with a drip pan underneath) but it held at 300 degrees and I cooked it for a little over an hour and fifteen minutes. It was superb.
