Turkey Breast only on BGE, 275 for about 3 hours???

edited November -0001 in EggHead Forum
I am trying a 7 lb turkey breast (only) on the BGE tonight. I could not find a recipe online, so I am guessing on cooking times. I was thinking about 275 dome temp for about 3 hours. When internal temp hits about 190 - it should be done. Does anyone have any better suggestions?

    Jay,
It'll take 2-3 hours at that dome temp. I'd strongly suggest you take it off at 160 degrees internal rather than 190. After 160 it starts going into the 'dry' state.....

Jay, I have done about 3 this year and the breasts are done at 160, I did mine at 325 dome. Removed and cover at 155 for about 15 minutes.

  • Jay,
If you are trying to roast a turkey breast, I'd suggest using the same temperature that you would use when you roast it in the oven, namely 325 degrees. Even roasting at this higher temp, you can get all the smoke flavor you want by adding smoking wood chunks. There is no need to go low and slow to "smoke" the breast.[p]Second, turkey white meat is done at around 160 degrees. 190 is WAY too done. I wouldn't even cook dark meat to 190. Pull it at 160 and then let it rest under a tent of foil for 20 minutes or so. Good luck![p]TNW
