3-1-1 method

Question on the 3/1/1 method. I understand doing the first 3hr indirect @ 250 (is that right?). Then 1 hour in foil, indirect or direct? Then direct for 1 hr., is this straight on the grill or do you keep the platesetter in there? Also, when do you guys put your rub on your ribs? Night before or right before putting them on the grill. I appreciate your help!!! Thanks in advance!

  • Matt in the STL,[p]I'm by no means a pro at this, but I've done it a couple of times now with great results.[p]I did the first 3 hrs at 275 (Grid temp).[p]Then another hour in a foil pan at 350 indirect, but I doubt it matters whether you use direct or indirect since the ribs are in foil.[p]I've done the last part each way now, and really couldn't tell a difference between direct and indirect... but I did the direct for just a few minutes per side constantly mopping and flipping, and the indirect for slightly longer and mopping and flipping less. BTW, I didn't come close to an hour for the last part. Maybe half an hour at most.[p]either way, the results were AWESOME!

    by its very nature... foil is indirect.[p]direct gives you the crispy maiilard luvvin that you are looking for, and you won't get it with foil.[p]pull all you firebricks/etc. after foiling and toss the ribs on truly 'direct' for the last hour
