Belle Brisket

We took our reheated brisket on the Belle of Louisville (steamboat trip) tonight. This was great stuff. We pulled it off the BGE last night and it was so tender.[p]Today it was reheated in some spiccy Texas style sauce and taken on the boat in a soft side cooler. The sandwiches melted in your mouth. This was our best brisket yet and possibly one of the best things we have done on the BGE.[p]It was a 5# brisket cooked for 10 hours at 200* and then 4 hours more at 250* to bring the final internal temp up to 198*. It was cookd on a v-rack in a drip pan with water.[p]Fritz
