I have thoroughly enjoyed your book (since a gift back in August)! Doing the shortcut brisket as we speak. It turns out this will be mother in law's birhtday dinner. I am doing a 3.5# flat. Started fat side down for 1 hr.at 275 at grid. Flipped over and put in temp probe from Guru and within 15 minutes, I am at 160. Checked with thermapen (158) and let it go a little longer. I have wrapped with foil now. Questions: Does this seem too fast? Do I need to flip the foiled brisket periodically?
