<p />You know that thin, tapered end of a tri-tip that could be cooked to a crisp? Well I took a trusty Food Loop to secure it back against the thicker part. The meat was wonderful! Per directions I gleaned here I roasted it indirect at 240 for about 1 hr 20 minutes to get to 120 internal - removed and wrapped in foil, brought Mr Egg up to 625 and seared 2 and 2. BOY did that tri-tip ROCK! So hungry I failed to take a picture, but it was medium rare inside but it had a nice crust to it and ohhhhh so tasty!
