Caring For A Brisket

I just put a choice 12lb brisket in the egg at 200f pit temp. Serving time will be about 3-5pm tomorrow. At least 1/2 of the brisket will wind up in the crock pot to hold it for some late comers. IIRC, somone said a splash of Cocoa Cola (original)will help keep things moist. I am looking for suggestions. Cola, apple juice?? I also recall someone saying a little cola with the brisket while it is resting can be a good thing. This is only my third brisket. Of the two I have done, one was really great, and the other, (in my opinion) was a little dry. It took'em an hour to eat the dry one. lol

    Gary,[p]Just Coke works good for a reheating liquid as does broth, apple juice or a mix of Coke and broth. [p]For resting I wrap briskets in foil and store in a pre-warmed cooler with the fat side up for at least an hour or two. This time allows the juices to re-distribute throughout the brisket.[p]If you have finished cooking the brisket wrapped in foil, no need to add any more liquid before resting, there should still be plenty in there. PS save the liquid as a base for a soppin' sauce at the table.[p]Keep the crock pot on low or even cycle it off & on it is getting too hot.[p]~thirdeye~
