I've had my large egg since last September, and used it quite a bit to make some really great stuff.[p]I've made some awesome steaks, incredible lamb chops, fantastic ribs, and absolutely unbelievable turkeys... In fact the turkey was SOOOO good that I had to make another a week after thanksgiving because we were all craving more![p]Just about everything (there have been a few, shall we say, experiments) I've made has been excellent, way better than with any other grill, and better than I've ever made before (and I've always been a pretty good cook).[p]But while everything has been really great, its never been "The Best". I've always had something better somewhere. [p]Until tonight.[p]Today I made Baby Backs. I basically followed Dr. BBQ's 3/1/1 method, but I didn't have enough time for it fully, so it was more like 2.5 at 275 /1 in a foil pan (with apple juice and a coating of honey) at 325 /15min. direct with the mop. And I used Dizzy Pig Dizzy Dust as the rub, and Bone Sucking Sauce as the mop. I used Hickory chunks and Cherry chips for the smoke. [p]My wife and I were stunned. These were absolutely the best ribs either of us has ever had! I mean everything has been great, but these were absolutely outstanding![p]We've had ribs at a lot of very good BBQ places all over the country, but honestly these were the best I've ever had. They were perfect. Smokey, but not too much so. Tender, but not too fragile. Spicy, but not hot, and tangy sweet, but not too sweet.[p]Absolutely unbelievable.[p]I still can't believe how good they were.[p]I've loved the egg since I got it, but now its a total passion!

Superglide,[p]Sounds like you are jazzed! I think your cook times sound about right since you were using baby backs instead of spares. They cook a little faster.[p]Happy Trails

Superglide,[p]i feel your pain, i recentley got a large for christmas and have cooked every night except for two nights since then. i now drink twice as much beer in a week as i us to. i now want every accessorie available for it. im in the middle of building table for her which by the way when i post pics of it will be a one of a kind quaranteed. and everything i cook looks so good that i will now have to invest in a digital camera for sure. i already see that i want a mini to take with me everywhere i go. anybody got a good way to haul a egg in the back of a truck without the fear of it turning over. maybe some sort of a egg nest box of sort.

Eggecutioner,[p]"Now you must try to achieve this accomplishment with all your other cooks."[p]See, here's the problem...[p]If I get that good, the crazy fantasies I'm already having about quitting my job and opening a BBQ joint will get harder to supress.[p]I was joking about it last night, and my wife, in total seriousness said it was a good idea cause the ribs were so good. The real test will be making a Butt that she likes. She doesn't like pork other than ribs... If I can make a Butt she likes, I'm opening up a place. I'm not holding my breath on that one though.

thirdeye,[p]The times did work out perfectly. The ribs were really perfect.[p]That was nothing more than dumb luck though. The kids and wife were hungry and I didn't have any more time![p]Next I'm going to try to duplicate the process for spares.

Superglide,[p]I know, aren't those ribs the best! I was so blown away with my talent the first time I made those! (I guess I can give Dr. BBQ a little of the credit.) Ribs are my very large extended family's specialty, so I have had some tasty ribs in my lifetime but the first time I made the backyard championship ribs, I was floored. I could eat them every day![p]Gwen
