<p />ive never thought to make some from scratch, just always used velvita cheese, salsa, chilis, sometimes some burger and taco seasoning. anybody have a real recipe with real cheese, what types of cheese would you start with.

    gee. .. i thought that was 'from scratch'. . .as compared to out of a jar. .. .that's how i've always made it. . ..isn't velvita real cheese?? . .. .[p]i guess you could use monteray jack/chedder blend for a good con queso as well. .. .but everything else i would think is a matter of taste (i.e. salsa/seasonings) . .. there is a restaurant around here that adds beer to their's and its really good.....

    i guess the trick would be to make it taste like velvita without using it. is velvita a real cheese

    fishlessman,[p]I like the Tex-Mex style nachos that are served down South in bars, bowling alleys, and the likes. They are triangle shapes of fried corn tortillas with a slice of nice melting cheese like Asadero or Manchego, and a few sliced jalapenos on top. You bake them on a large pan and maybe add some salsa if you like. Sometimes I use the flat tostada shells and snap them into thirds.[p]But for a dip like you are talking about, I'll bet something like Manchego would work. It is ok for fondues and the salsa would thin it out a little.[p]~thirdeye~

    All the Mexican Restaurants here in Florence Alabama have white cheese dip. The stuff is awesome and I keep telling Tammy one of us needs to get a job there for a weekend to learn how to make it. [p]-Kevin

    Would some combination of mozzarella,cream cheese, sharp white cheddar and/or some sour cream work. Latin grocery stores sometimes have a white cheese for enchiladas that melts well not sure of name.

  • I think it's called queso fresco. It's like jack but melts a little better.

    i tried a combo of jack and colby last night, i think it needs something to bind the two together as it heats, will try some cream cheese and some sour cream next time to see if that works. thanks for the idea

    didnt think i would find that manchego cheese here, but i found it. they didnt have any jalopenos so ill get them tonight to try it on the corn tortillas. its good to try new cheeses, the cheese isles are getting big lately its confusing.

    Buenos dias fishlessman,[p]The sliced ones in the jars work good too (just not the ones packed in heavy oil) because they are so moist. Start will a thin slice of cheese so the tortillas don't over-brown.[p]~thirdeye~
