Last nights dinner

Last night I pounded out chicken breasts to 1/4" thick, placed a strip of green chile on them and a couple tbs of crumbled queso fresco, rolled them up and mummy wrapped them with 3 strips of bacon on each, and then sprinkled them with DP's Jamaican Fire Walk. I cooked them, using hicory for smoke, at 350 indirect to 165 internal temp, about 45 min. These were really good and the cheese held up very well. I've done similar things using other cheeses only to have it melt out and dissappear. -RP
