Low Carb/Cabbage over Pork Steak

This is another cook I did over the holiday that came out very good. The pork steak was rubbed with my favorite low carb rub and placed on the lower level of my contraption. For the cabbage, I cut up 3 strips of bacon and about a half pound of two year old country ham and put them in the pot on the stove. I then cooked them a few minutes to get some of the grease rendered out of them. Took it off the stove and added 1 can of beef broth and enough water required for the cook. I then added the cabbage and about a pound of smoked sausage.[p]41MVC-007E.jpg[p]This is what it looked like just before I carried it out and placed it on the cooker.[p]41MVC-008E.jpg[p]This was the start of the cook. I did use a lid on the pot until the cabbage cooked down into the liquid and then removed the lid to pick up a little smoke flavor. [p]This made for a nice meal and the pork was served with my favorite low carb sauce.[p]Dave

    Oh boy, that looks good. That's soul food for me, in fact I did a cabbage thing last night, added sliced apples and a touch of cider vinegar with a tablespoon of butter for a side dish. [p]I like your setup, economy of cooking one item over the other. Someday going to build me a multi level system.
    Two year old country ham- that's living high on the hog!
    I might try this with pork shanks. Thanks for the ideas.

    Old Dave,Looks good. What sort of diet does this follow? Iv'e been advised to cut down saturated fats. If I paid complete attention to my Doc all I'd be able to eat would be carrots and water.

  • Charbon,[p]I do the low carb thing thru the colder months and there are 7 of them out there. I have used the Atkins diet for about 30 years. I really doubt if this diet would work for you as it is a ton of fat with about any dish you come up with.[p]Good luck with any diet that you try as all of them are tough to stay on. [p]Dave

    That looks fine! Cabbage is one of my all-time favorites. Although I doubt the cornbread we always had with it would fit into the low-carb diet. :( [p]Looks great, and gives me some idears....
