Poultry problem
Here's the thing: I want to cook without the skin. But its too dry. I don't like rubs. Other than bbq sauce is there anything I can put on to keep it moist? I like a little smoke so I don't really want to wrap it up in foil. If I cook it less, it always gives me cramps. I hope I don't have to go back to the microwave. OOhhh, bite my tongue.

Gord,[p]Sounds like you need to try brining it overnight before cooking.

Bob,[p]Absolutely. Gord, after it's brined you might try brushing the bird with a mix of mustard, soy & oil before cooking. That will add flavor and a little color.[p]Cathy
