~5 Beef Tenderloin ?

Unknown
edited November -0001 in EggHead Forum
Ok bit the bullet and went with the whole Beef Tenderloin. It is about ~5 lbs. Going to Sear each side for a total of 5 minutes at +700 (trex method). Let rest bring temp down to 350-400 and cook indirect (place setter) the rest of the way. Any idea of roughly how long the indirect cook will be. Will probably pull at 130-135. Trying to get an idea when to start the cook. We want to eat around 8:00pm. Do you think 5lbs will be enough for 9 adults and 2 6 year olds? It looks like a pretty big piece, guess it will have to do ;)[p]Basically using madmax instructions from previous post (thanks Max :))

    gdub16,
    aaah
    trying to help here.
shouldn't take too long.[p]what did max's recipe say?[p]to rare, i'd allow 45 minutes if you have already seared.
assuming 425 dome temp.[p]do you have a probe themometer to leave in?
let it go til the internal is 130 then take it off it'll cruise up another ten degrees to medium rare.[p]THAT IS A ROUGH GO-BY... better to err on the less-time side. can always put it back on

  • stike,
pretty close to what i'd do .. . after the rest mine usually take about 45 minutes at 400 degrees dome temp to hit 125 internal temps ...funny thing about a whole tenderloin .. . whether you do the whole thing or just the butt end, it takes about the same amount of time cause of the shape of the thing ... .if you have a real thin tail at the one end, tuck it back up and tie it wwith string to insure more even cooking from one end ot the other. . . . or, if you have some folks that like their meat more done than others, leave the tail alone, roast the whole thing till its 125 at the fat end, and you'll already have some medium well at the other end for those folks that want it. .. . [p]good luck[p]max

  • stike,
yes I do have redi check. Will put it in during the roast. Max's said about 40 minutes.[p]Thanks for assurance. Just got make sure I don't get to looped up prior to the sear. I have a tendancy to burn myself after I have had a few. ;) Think about using some Jack Daniels pellets in a foil pouch during the Roast what do you think?

  • mad max beyond eggdome,
cut the tail off and made a couple of filets.[p]Thanks again and Happy New Year to all you eggers. Getting close to cooking time, got get my game face on ;)
