What Type of Beef Roast

Wife wants me to do some type of Beef Roast on the Egg for New Years Eve Dinner for 9. What type of Roast should I get and what times temps and cooking methods? Shes doesn't want to do Prime Rib and Beef Tenderloin is little to pricey. Was planning on picking something up from Costco tomorrow morning so can't marinade over night :(

  • gdub16,[p]How about a strip loin? (Same thing NY or KC strip steaks come from). The whole loin in cryovac will give you enough for the roast (you'll need 4-5 lbs if you've got beef eaters) and probably half a dozen 1" steaks from the rest (I'd guess you'll need about half for the roast). Direct at 350-375 dome, pull at 125 internal for med rare, let rest a good 10 mins before carving. Or treat the whole thing like a big steak and follow the T-rex directions on TNW's site.

    sounds good. The Wife wanted something would could slice thin and serve. I do have some time to marinade over night so any good beef marinades would be good as well. Thanks for the input will look to see if Costco carrries any

  • gdub16,[p]I get mine at Sams Club, assume Costco carries a similar line. See if you can find IBP (Iowa Beef Packers) brand (just the initials IBP on the cryovac) and for what it's worth I seem to do best by picking the thickest one in the case. USDA Choice or Prime.

  • Just bought 11lb. strip loin (KC Strip not NY) had it cut into 1-1/4 to 1-1/2" Steaks. It was on sale $2.99/lb. Can't wait to cook for New Years Eve.
